What app do you use to create the actual gif?

I use a not so trail version of Advanced GIF Animator. Pretty simple. You can also use Photoshop (the non-x64 version) to import a video as a GIF.

I managed to create a command line for ImageMagick that converts the entire lfs screenie folder into one gif:
